Q: Hi Dr. BBQ,
I have been trying to smoke food on the BBQ and I am having trouble getting the wood chunks to smoke, I soak the wood but when I put them on the coals they smoke for a few minutes then they catch fire? Any idea what I may be doing wrong? Thanks in advance for the help

The key is in your cooker. You need to be able to control the oxygen flow, and that will keep the chunks from burning up. You also need to realize that just because you can't see the smoke doesn't mean it's not flavoring the meat. Less smoke is always better than too much smoke anyway.
